can you open your own business as a partnership whilst working for a company (business partner would be running the business)? also, is it possible to for the business to be a customer of the company we work for or would this be a conflict of interest?

Legally there is nothing to stop this. However, the employment contract may place some restrictions on what can be done during, and for a few months after, the employment. Eg, you could be prevented from having any other employment or business interests.
Again, there is nothing to stop your business being a customer of the company you also work for. However, if (for example) you are the person whose job it is to set the price paid you should flag up the link so that no-one can accuse you of anything. This is not a "conflict of interests" in the moral sense, but there could be an accusation that you are not getting the best price for your employer.

You can have more than one gig going on at a time as long as you fulfill your responsibilities in both places. Your business can be a customer of your employer as long as you are not in competition with them. It would be best to work out both issues with your employer before you begin.

Yes to both questions - unless your current contract of employment precludes it, which may be the case. Wise to check. Your current employer shouldn't have a problem with having your new business unless there are hidden issues such as ownership of IP or similar. Best bet is to talk to them.
