We plant out potatoes in a row. My husband digs about a 4 inch trench with the hoe and plants the potatoes about 6 to 8 inches apart in a single row down the trench and covers them in. After that the whole row is treated as one. When they get around 12 inches tall he starts hilling them up by taking dirt from the outside area of the row--go a ways away from the row and hoeing it over the row. Gradually as the plant grows he adds more. He will end up with around 10 inches of extra soil over the row. It's not exact what you are looking for is to keep the potatoes from peeking through the ground and turning green so they are unusable.
This method keeps you from digging forever to get potatoes and keeps them growing where the soil is warm and makes for less work.

Try going to ehow.com and asking.
I helped my Dad plant them when I was a child but can't remember
how deep he put them.
