What kind of hot sauce should I use for baked hot wings?

Every time I try to make baked hot wings, they dont come out right. I don't know if the cooking process just neutralizes the spice in the sauce or what, but I'm getting kind of annoyed. Are there any sauces out there that would remain spicy thru the baking process?

Update:

@shorty88: do i throw that in melted butter/hot sauce mix in the pan before or after baking them though?

Sauce the wings AFTER they've been baked

I like to roll my wings in a little flour and tap off the excess before I bake them. This gives a little more crunch then you would normally get.

My favorite wing sauce is a 50/50 Franks Red-hot, and butter, with a few splashes of Sirancha for an edge.

I would suggest marinating your wings overnight in Frank's Red Hot (the original hot wing sauce, by the way.) Then baking them as usual, then re-saucing them. The original recipe called for a mix of melted butter and Frank's. Here's the Frank's recipe page for more ideas: http://www.franksredhot.com/recipes

    Have fun!

Source(s): Home cook, and yes, I do put Frank's Red Hot on just about everything I cook.

if you melt some butter with a bottle of franks or crystal hot sauce in a pan and toss the wings in that they turn out great....after baking them ;)
