I am looking for a specific potato salad recipe, can you help me?
I had an amazing potato salad today, and I can't figure out the recipe. I googled it, for what it was worth, and still can't find it. Here is what I know:
* It had hard boiled eggs.
* It did NOT have red potatoes in it.
* NO onions.
* NO celery.
* I could taste mayo.
* NO mustard.
Any ideas? Thank you in advance!

I wouldn't know exactly, but it sounds like the kind I make for my kids-- leaving out onions, celery, etc., and only putting in what they like. I make two bowls- one with the "goodies" and one without for them. I peel & cut about 6 potatoes (regular white potatoes) into chunks, boil for about 15 minutes (covered, stirring 2-3 times so they don't stick to the bottom), drain, then begin adding in a separate bowl the following (this is approximate- and would serve 6-8 people):
2 chopped, hard-boiled eggs (cook these while your potatoes are cooking, or even before, to cool)
3/4 cup Miracle Whip (or generic, or real mayo if you prefer it)
1/2 cup chopped bread & butter pickles (or sweet, or dill- or a MIX of them is good, too)
salt & pepper to taste
Paprika (sprinkle the top of your salad after everything is mixed together)

about 2 cups of cooked cubed white potatoes
2 eggs chopped
1 dill pickle chopped in tiny pieces
1/2 of a small cucumber chopped/diced
salt & pepper
dash of parsley
enough mayo or miracle whip to coat
