I would like to have someone who makes wine give me pointers on making it.?

I'm using rainier cherries and need to know how to get it started like do I boil them and then when the water is warm add the yeast and sugar and how much water do I put over them n the pot before I strain them and put them into my 5 gal glass jar and let it ferment? I know to stir like 3 times a day and all but need a little help getting started. I have everything I need. thank you.

    Pick the one that best fits your cherries and follow the recipe as closely as possible:

    What I can tell you from experience is this:

    IF you boil the water DO NOT pitch the yeast until the temperature is below 80 degrees or it will kill the yeast. Use only stainless steel, enameled steel or glass; anything else will cause a haze in your wine.

    Leave the pulp in the primary fermenter for the first few days (3 or 4) in a straining bag (you can buy one from most suppliers for just a few dollars). Punch down the bag a couple of times per day for the most intense flavor.

    If you don't have the ingredients listed get them before you start.

    The most important thing I can recommend is to SANITIZE EVERYTHING! Once you have everything sanitized you should be ready to start.

    Make sure the wine is fully cleared and has been stabilized before bottling unless you intend to make a sparkling wine (cherry does make a good sparkling wine) using proper champagne bottles (the regular bottles cannot hold the pressure; they break).
