I was listening to a Cooking Channel program that was describing a pastry made with dulche de leche. I was wondering what it is and how it's different from milk in a recipe.

Dulce de leche is a thick, caramel-like milk-based sauce or spread.
Literally translated, dulce de leche means "sweet milk" or "sweet from milk", though it could be best described as "milk jam". It is prepared by slowly heating sweetened milk to create a product that derives its taste from caramelized sugar.
