What should I eat as a diabetic with celiac disease?

I am confused about how many calories I should eat, or even how to work out how many calories are in the food I eat. I seem to ricochet between not eating enough and eating too much. What would a healthy breakfast consist of for a person like me? (And lunch and dinner too!) If you have any useful ideas I'd love to hear them.

Given that most gluten-containing foods are also high-carb foods, it is actually perfectly possible to eat a diet that is both gluten-free and low carb.

Carbs are what raise blood sugar the most, so it makes sense for diabetics to limit carbs. And carbs tend to be gluten foods as well - so it makes extra good sense for you.

Base your diet on non-starchy vegetables and protein. So for example, roast chicken with green beans, asparagus and cauliflower. Or a nice steak with mushrooms and peppers.

A diabetes friendly breakfast that is also coeliac friendly would be cheese omelette with bacon.

Calories aren't really important. You just need to avoid the gluten and restrict the carb, which isn't so hard when they are often the same thing.
