Best way to make bacon wrapped scallops?

In terms of which seasoning would go best with it? Or would you bother seasoning the scallop at all? Which one will make it taste better? Baking or grilling? Thanks!

    Scallops Wrapped in Bacon

    Ingredients

    12 slices applewood smoked bacon or other thick-cut bacon

    12 (U-10 size) sea scallops

    2 tablespoons Essence, recipe follows

    1/2 teaspoon salt

    12 (6-inch) bamboo skewers, soaked in warm water for about 30 minutes

    Freshly ground black pepper

    2 tablespoons unsalted butter, at room temperature

    Directions

    Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.

    Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.

    Preheat a grill to medium-high heat.

    Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.

    When the grill is hot, brush the grates lightly with oil, then place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately.

    Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast)

    2 1/2 tablespoons paprika

    2 tablespoons salt

    2 tablespoons garlic powder

    1 tablespoon black pepper

    1 tablespoon onion powder

    1 tablespoon cayenne pepper

    1 tablespoon dried oregano

    1 tablespoon dried thyme

    Combine all ingredients thoroughly.

    Baked Scallops Wrapped in Bacon

    Ingredients

    12 medium scallops

    ¼ cup chopped sun-dried tomatoes

    ¼ cup extra virgin olive oil

    2 tablespoon basil leaves, chopped

    1 ½ tablespoon balsamic vinegar

    ¼ teaspoon freshly ground black pepper

    2 tablespoon pitted black olives, chopped

    ¼ teaspoon salt

    Method

    Combine the sun dried tomatoes, basil, olives and olive oil in a food processor and process until you get a thick paste. Rub the scallops with salt and pepper and then add the tomato and olive oil mixture to it. Let the scallops marinade in this mixture for about half an hour. Wrap each scallop with a bacon strip and place all the wrapped scallops in a greased baking tray. Bake the scallops wrapped in bacon in a moderately hot oven for 10 to 15 minutes until the bacon is crisp and the scallops are firm. Serve the scallops wrapped in bacon with a drizzle of balsamic vinegar.

    Crockpot Bacon Wrapped Scallops Recipe

    Ingredients

    10-12 Bacon strips

    1 ½ pounds Fresh Scallops

    Lemon juice (from 2 lemons)

    1 tsp Black pepper

    Preparation Procedure

    In a bowl take the lemon juice and add a teaspoon of black pepper into it. Dunk the scallops into this lemon-pepper mixture and toss them well. Refrigerate the mixture for 2 hours, after which you take each scallop and wrap the bacon strip around it. Pierce a toothpick into it to hold the bacon and scallop together. Place them gently in your crockpot and cook them slowly for 2-4 hours.

    I belong to the school that "everything tastes better with bacon", and as such, if you use a good cured bacon, you shouldn't need any additional seasoning. Grilling sounds tempting, though I usually cook this appetizer under the broiler.

    I'd definitely go with grilling. I think grill brings out such a much more pronounced flavor in foods. And as far as seasonings, I'd go with just some garlic and butter. Or possibly some season salt or Old Bay seasoning.

    How approximately creamy polenta? Lay the scallops form of off to at least one part, and placed a bit of of basil or perhaps a dill sprig at the different. I additionally just like the concept of shredded scallions and a tiny little bit of diced purple bell pepper. Sounds yummy!

    we wrap scallops or water chestnuts in bacon then spread a little barbeque sauce on and broil.
