What is the best email service for Windows 7?
I'm about to set up a new computer with "Windows 7 Professional (64 bit) and was wondering what would be the best email client to use? I would like something similar to "Microsoft Outlook" which I have been using for about the last 7 years and am quite used to, something that can be opened from a "Desktop Icon" rather than having to open a browser first would be good,

I recommend Windows Live Mail. It's a free, fast client for IMAP/POP email accounts (which covers most all types of email, including gmail). You have to download it as part of the Windows Live Essentials package.

As an alternative, you could try Mozilla Thunderbird, which is a bit more full-featured.

Gmail Works great for a Web Client and Mozilla Thunderbird works good for a local offline Client.

You can use Windows Live Mail, which is part of Windows Live Essentials 2011. I find that program to be very easy to use and is comparable to Outlook in terms of functionality.

It's a matter of preference AND personal opinion, to be honest
I use Gmail, having tried just about every email service available to date.
