His favourite meal or the first meal you had together? Otherwise a steak is usually good or something like chicken veronique?

Carbonara Pasta or Pesto and Cheese Fettuccine

Roast Chicken/ Garlic Mushroom and Beef

Red Wine

Cream Mango Cake/ Black Forest Cake

I'm not latin but i may give you some ideas from my modest point of view. As entrees you could try fajitas and guacamole, or tacos and molten cheese. As main course a mediteranean paela with chicken, chilli, scallops/mussels and fresh mushrooms. And dessert, maybe a delicious affogato or tiramisu! Yum. Hope i helped and i wish you both a very happy anniversary. The meal is simple but you could still spice it up with champagne (Moet) or white whine :D

Pesto Pasta with Chicken

Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Heat oil in a large skillet over medium heat. Saute garlic until tender, then stir in chicken. Season with red pepper flakes. Cook until chicken is golden, and cooked through.

In a large bowl, combine pasta, chicken, sun-dried tomatoes and pesto. Toss to coat evenly.
