replacing butter and milk in recipes?

I have to cook for a relative who has lactose intolerance!

how do I subtitute soymilk or tofu in recipes calling for soft cheeses cream buttermilk and unsalted butter

should i use rice or almond milk instead of soy milk in biscuits cookies and cakes?

more egg? more flour? more whipping?

    You can substitute cream cheese with Tofutti Cream Cheese. Butter can be substituted with soy magerine or they even have a soy butter. You can use either type of nondairy milk in baking. I've found that coconut milk works best in bread, almond milk works best in sweet baked goods, and soy works best in muffins. Either works with anything though.

    These days, there are recipes already out there to accommodate dietary intolerances. Just look up "dairy free cookies" or whatever. In some recipes, using water instead of milk makes no appreciable difference. I make bread and when my lactose-intolerant friend is going to eat it, I just use water instead. I also use olive oil in place of the butter the recipe calls for. That works okay for bread. As much as I don't care for margarine, it makes an acceptable substitute for butter in many recipes but make sure you buy a dairy-free one.

    Margarine or soy butter can be substituted for butter. Ask your relative if they're affected by goat's cheese. Many people intolerant to cow's milk aren't affected by goat's milk

    As a vegan,you should use Ener-G egg replacer. I think soy milk should be just fine for cakes.
