I always keep leftover pancakes in the fridge or freezer. Sometimes I will make large batches and then freeze them for quick breakfasts in the morning. The only problem that I have is sometimes the pancakes with be tough or rubbery when they are microwaved if you cook them too long. Obviously, they taste better when you initially make them, but it's definitely okay to reheat them.

Cool them on a cookie cooling rack, put them in zip lock baggies and freeze them. They can be reheated in the toaster. Or, feed them to the birds and squirrels.

I put chocolate chips in my pancakes and I like to eat them room temperature (like muffins).
