Are minor loss coefficients for valves applicable for any typical fluid?
Doing a lab for my fluids class, and I am wondering if the measured K values for a valve would change for a fluid of different viscosity?

I am sure they must. That is one reason to use equivalent pipe lengths rather than K values. See Below
