See, I was born a Libra. But I think I'm more like a Scorpio.
My moon is Gemini. Is there such a thing as "sign mixtures" where if your moon sign is one thing, and your star sign is another, they add up like an equation to form another sign?

No, there isn't.
You have a Sun sign (what you are calling a "star sign").
And a Moon sign.
And a Mercury ... Venus, Mars, Jupiter, Saturn, Uranus, Neptune, and Pluto. Each "planet" represents a particular need, a particular facet of your personality
And each of these is in a particular house (part of the sky).
And the aspects (certain distances between planets) create the dynamics of your personality. Something like a square (90 degrees) of Pluto to one of your "personal planets", for instance, could create the same extremism of Sun-in-Scorpio .. even without Sun in Scorpio in your chart. Or other factors could create this, as well.
