What can I use leftover buttermilk for?

I used this in a recipe and now I don't know what to do with it. Can you give me some ideas?

Homemade pancakes, make your own homemade buttermilk salad dressing (my favorite), use it in place of cream or milk for mashed potatoes (also delicious). You can make any kind of dessert, like muffins, pound cakes, coffee cakes. Tons of things to do with it so it doesn't go to waste. It's a staple in my fridge.

You can substitute it for most batter recipes that call for milk or water. How about an apple coffee cake? Belgian waffles? Spice cake?
