pork drippings? is that like lard? Yes, you can buy pig fat at the butcher and render it yourself. Or you can buy an already processed lard in a container in the baking aisle with the other fats. Make sure you don't get the hydrogenated sort.

Lard is great for cookies, and pies, and for general fat in the pan for any cooking (other than for vegetarian meals) Has a higher smoke point so food brown better in it.

I want to try "leaf lard". It comes from the area around the kidneys and is supposed to be the best for pie crust.

It depends, I myself have had severe reactions to thick pork chops( bone in) and quite the adverse reaction to a thinner fattier cut without the bone...then at certain times of the month, it's quite the contrary. I read somewhere that it's not pork that gives you the swine flu,as the swine flu is now thought to be an airborne virus that is passed through one ply toilet paper. I'm not sure what your "allergic" reaction is but if I can help in anyway email me. I hope this has helped.

Your best bet would be to find a local slaughter house and contact them. They sell fat by the pound. Cut it in 1-2 inch cubes and fry in DEEP THICK POT-'cause it will do some ferocious popping!

We cook it outside and I use the lard for general cooking and baking. The cracklings are a treat for cornbread.

Morrison's sell pig skin, cook it, make delicious crackling and collect the dripping as a bonus!

You probably want to buy it ready made than make it yourself. Try a search at the websites of the big supermarkets like tesco, asda etc. I usually see them at the butter section in stores.

I go to our local butcher, ordinary butchers tend to have it, the little chaps you might find in a village high street.
