That's not Chinese Checkers, that's Marble Solitaire, and yes it can end with just one piece left on the board, but it's very tricky to get it down that low. I'm sure there are solutions out there if you look for them, but you didn't ask for a solution, just whether or not it's possible: Yes, it's possible. Good luck, I can usually get it down to 3, sometimes 2 but I don't think I've gotten it down to 1.
Oh, and I thought I'd add a link to Chinese Checkers and Marble Solitaire to show the difference between them. The Main differences between them are:1. Chinese Checkers is played by more than one player, Marble Solitaire you play by yourself, 2.Marble Solitaire you remove marbles after you jump them, Chinese Checkers you have to jump pieces to move them and they stay on the board after they've been jumped.
