The story refers to specific jugs of water, not all the water in the world. You are free to believe or not believe it.
"6 Nearby stood six stone water jars, the kind used by the Jews for ceremonial washing, each holding from twenty to thirty gallons.[b]
7 Jesus said to the servants, “Fill the jars with water”; so they filled them to the brim.
8 Then he told them, “Now draw some out and take it to the master of the banquet.”
They did so, 9 and the master of the banquet tasted the water that had been turned into wine. He did not realize where it had come from, though the servants who had drawn the water knew. Then he called the bridegroom aside 10 and said, “Everyone brings out the choice wine first and then the cheaper wine after the guests have had too much to drink; but you have saved the best till now.”

Of course, there is no evidence for transsubstantion. Hell, water and wine are not alike at all, even though wine mostly IS water.
Also, it is stated that there were six vessels, each holding between twenty and thirty gallons. That's about 150 gallons of water/wine. Even if it was a fairly large party, they'd be smashed outta their heads by the end.

I don't understand why it couldn't have been a metaphor? What if there were lots of metaphors? I mean if they could do that **** thousands of years ago and we can do all the **** that we can like go into ******* space, call a dude 5000 miles away and communicate faster than the speed of light, why can't we turn some water into wine or some other "miracle?"

hey, not to be rude, just giving some advice
You shouldn't be so superficial about things (ex. religion)
if you keep thinking that way you could end up pissing some people off in the future.. >.>
We all have our beliefs and one life, so we should just respect others and their beliefs/opinions.

It was only a small amount - about as much as is served at Mass from the Communion Chalice.
