According to the Bible, what did God create first?
And are the 6 YOM of "Creation week" in Genesis 1 describing the creation of the entire universe or just the events/stages after the earth already existed?

The heaven and the earth. Then an unspecified amount of time occurs before he begins the "creation" week. Between those two events the Bible elsewhere indicates that Lucifer and the angels (among other creatures) resided on earth until it was judged with water...coincidentally, the timing appears to coincide with the last ice age. The 6 days of creation that follow is the restoration and reconstruction of the earth to prepare it for human life after the state of judgment it was in in Genesis 1:2. Long story short, the Bible claims a young age for humanity but an older age for the earth.

God created Matter first? I don't know what they describe. I wish I KNEW. But until I know I will go with what the Bible says, 6 days of creation. YOM = days, and days = YOM. Today we have 7 YOMs in a week. In the good old YOM things were much more simpler. YOM we have cell phones and computers and its a rat race. One YOM I won't have to be concerned about all this. For one YOM I will be with Jesus for YOM.

The Bible says that Jesus is the beginning of God's creation.
Revelation 1:1 says that the Revelation is given by Jesus.
Revelation 3:14 says: ... "These things saith the Amen, the faithful and true witness, the beginning of the creation of God".
Genesis 1:1 says "In the Beginning God created the Heavens and the Earth." ....It goes on to describe his preparing the earth for humans and animals to live on.

It's talking about the entire universe, because the world wasn't there, nothing was around really. You can just get a Bible and read the order it says right there.
