Any ideas for a 3 course meal ?

Me and my friends are each having an evening of cooking a 3 course meal, I wondered if you could suggest some ideas, recipes and themes to what I could cook. I need a starter, main and dessert.

Update:

I forgot to add that I'm doing vegetarian dishes.

    Go Italian!

1st course- Make a cheese tray or bruschetta

2nd course- Caesar Salad, Linguine with Spinach, Simply Squash, nice bread

3rd course- Lemon sorbet with fresh berries

    Linguine with spinach

    •4 quarts salted water

•1- 9 oz package of fresh linguine

    •2 cups fresh baby spinach

    •½ pint cherry tomatoes

    •½ cup of basil pesto

    •2 tablespoons grated Parmesan cheese

    •S&P to taste

•2 or 3 pretty spinach leaves for garnish

1.Put a large pot of water on to boil.

    2.Chop and seed the tomatoes.

3.Remove the stems from the spinach and tear into bite sized pieces.

4.When the water begins to boil add the spinach. Boil for one minute.

5.Add the linguine to the water. Stir. Boil for 2 more minutes (Be very careful as fresh pasta cooks QUICKLY.)

    6.Drain the pasta/spinach.

7.Toss the pasta and spinach with the remaining ingredients in the serving bowl.

8.Place the spinach leaves in the middle of the dish for garnish.

    Simply Squash

    •1 tablespoon olive oil

    •½ pound zucchini

    •½ pound summer squash

    •2 cloves garlic

    •1 tablespoon fresh oregano

1.Wash and slice the squash. Cut the squash into medallions or coins, discarding the ends. Try to make the cuts the same size.

2.Heat the oil on medium high.

3.Add everything but the oregano. Sauté for about 10 minutes or until the squash begins to get soft. Stir often.

4.Reduce the heat and cover, placing the lid at a tilt to allow steam to escape. Cook until the squash are completely tender and beginning to turn golden brown around the edges. Stir occasionally. This should take about 30 minutes.

    5. About 10 minutes before the squash is finished, chop the oregano and stir into the dish.

I always make the starter and Pud v simple. Shop bought pate mashed up to look home made served with oatcakes and a nice salad with shop bought cranberry jelly or sauce or coulis. Very tasty Very easy. For mains I do chicken breast stuffed with Haggis. Cook Haggis first. Unfold/Open up the chicken breasts and spoon in haggis wrap individually in tin foil and cook for 25 Min's. Serve with potatoes and veg. With a Hollandaise and Drambuie sauce this is the bit that looks tricky bit isn't. Buy a jar of ready made Hollands sauce and heat very gently. Pour some Drambuie into a frying pan and heat gently when hot you need to burn off the alcohol as it taste horrible. You nee to put a match to the Drambuie!! Be prepared for a big flame which you need to try and blow out quite quickly. It looks great! Then you pour some of the Drambuie into the heated sauce probably add in about a fifth of the total mixture. Its tastes fabby and everyone things you a re a great cook. Just go to a great patisserie and buy 2 little tarts for pudding. Easy and Beautiful. Hope it all goes well. By the way the first meal I cooked for my now husband was hamburgers on toast with melted cheese and beans. I thought it was Delicious he was very disappointed!! we still laugh about it.

Starter- soup. Tzatziki soup (Greek yoghurt, mint and garlic) Leek and Potato soup, or gazpacho? These are all pretty easy to make and you can find recipes online.

Main- macaroni cheese, Spanish omelette, grilled chicken or smoked salmon with dill and cornichons? Any of these can be served with salad :)

Dessert- Eton mess, fruit salad, cake, etc.

All the recipes can be found on google and they're pretty easy :)
