Whats the biggest wheel & tire combo that can be used on a stock gmc sierra?
I have a 97 gmc sierra and I want to put 17x8 inch wheels with all terrain tires. The overall diameter would be around 31.6 inches depending on the tire. Would this work with a stock ride height or do I just need to find some 15 inch rims? Also how wide would I be able to go?

Sure, you can put 17x8 rims on your Sierra. The proper tires size would be 255/60-17.

I have used 33-12.50/15's on several stock trucks ON THE REAR. Width on the rear depends on how heavy you load the truck. On the front I have used 30-9.50/15's without any problems . Much wider than that MAY cause steering clearance issues. On a 4X4 32's would probably be max without some Mods.
