Anyone know of a potluck meal that can be frozen (or will keep a few days), but isn't served hot?
Our family picnic is coming up. Normally I make salad rolls, but this year I won't have time. We have a wedding to go to the day before the picnic and will have to take the overnight bus back to get home in time for the family picnic.
So I need something that I can make before we leave, either something that can be frozen or something that will still be fresh after 3 or 4 days. However, it can't be something that needs to be served hot - usually the oven space is all claimed, and there are a few hours of activities before eating.
Oh, and it should be an entree or appetizer... deserts are covered already.
Any ideas?

Pasta salad is easy and keeps for several days. I make mine:
1 bag of rotini or similar pasta, cooked according to directions, cooled and drained well
1 bottle red wine vinagerette salad dressing (I like this better than the traditional Italian dressing)
Thinly sliced vegetables of choice (I like bell peppers, carrots and broccoli)
1 small can sliced olives
1 can drained (rinsed if you want to reduce sodium) corn
Shredded Parmesan (or similar) cheese
Toss all of the ingredients in a large bowl.
Cover and store in refrigerator, stirring daily to meld flavors
Since there's no meat, eggs or mayo it'll be alright to leave out for a while, as compared to deviled eggs, mac or potato salad. I do like to add chicken to my pasta salad, so make sure that if you do you keep the bowl chilled while it's out for serving.

Well here are a few that you could throw together last minute...
Layered taco dip:
Add hamburger meat
Refried beans
Salsa/tomatoes
Peppers
Onions
Olives
Sour cream
Shredded cheese
Then bring different types of chips to dip( crackers, tortilla, pita, Doritos, fritos)
Pickle roll ups:
Whole pickles
Cover in cream cheese
Wrap beef around them (slice into small pieces or leave the pickles whole)
*this you could make beforehand*
Fruit bowl/salad:
Just chop up different fruits and put in a giant bowl, then put in in the freezer until the day of. Take it out about and hour or so in advance so that it's not frozen solid, but still really cold!
(strawberries, blueberries, raspberries, blackberries, cantaloupe, honeydew, mango, peaches, pears, grapes, etc...)
Mini Salad bar:
Get a giant bowl and fill with lettuce
Add croutons
Carrots
Hard boiled eggs
Cucumbers
Tomatoes
Onions
*then on the side-
Cubed ham/turkey
Bacon bits
Extra croutons
Cheese
Dried cranberries
Almonds
Olives
Peppers
etc...
Have a variety of different bottled dressings for people to choose from. Make sure to have *ranch, Italian, French, caesar, along with any others you like

some shrimp keep on crushed ice and cover with some more ice is great for pot lucks and serve cold with butter and marinara
