Uses for mint leaves?
I got a little baby mint plant for free last year and was SO sure I'd killed it. Put now that the snow has melted and its been getting water and light, its coming back full force! I've never used mint in cooking and have no idea what to do with it, but the leaves are so beautiful and fragrant when crushed that I want to find something to do!
I have a dehydrator and could just make mint tea or something, but I'd love any other ideas.
Excellent suggestion. Should have added that my 21st isn't until August (though that may not stop me)....

I wouldn't bother with a dehydrator if you plan to dry it to make tea out of (my favourite use for it, by the way)...I just gather it in bunches and hang it upside-down in the pantry for a few days.
For fresh mint from my garden, I use it in salad dressing - it's a vinaigrette that the recipe calls for parsley, but I use half mint and half parsley.
Making a mojito is a good use for it, or you could use it for mint juleps!

Wait until it takes over the yard. Mint is invasive in a garden. Make mint juleps.

Many Thai recipes use mint.
Vietnamese spring rolls but NOT to be used in Vietnamese pho.
