How many water molecules are produced when a fat is formed?

Say we are talking about a triglyceride

Would it be three water molecules since three ester linkages occur in a triglyceride? So for every ester linkage, one water molecule is produced?

Is this correct??

    Yes, that's correct!

    Check it out:

    HOCH2CH(OH)CH2OH + RCO2H + R'CO2H + R''CO2H → RCO2CH2CH(O2CR')CR'' + 3H2O

    (The three fatty acids (RCO2H, R'CO2H, R''CO2H in the above equation) are usually different, but many kinds of triglycerides are known). But there are your 3 water molecules!
