Its healthy, veggie burgers don't have protein but are still healthy, and since your having peanut butter that will make up for protien. Are you a vegetarian now? If you are tofu is good for you too and soy milk or rice milk. If your not then drinking skim milk is healthy and has no extra fat unlike 2% . Cheese is only fattening if its processed and if you eat too much of it but I eat so much cheese and I'm only 100 pounds lol. You sound like you have a decently balanced dinner fruits veggies grains protein dairy ...
Btw congrats for recovering :) not many people are as strong as you I myself could never imagine being anorexic cause I love food too much lol but just keep at it and stay strong !!! All you gotta do is eat healthy and exercise regularly :D ps. Curvy girls are hotter as any guy cause there's a difference between fat and curvy cause you can be toned but have curves !!

Sounds perfectly healthy. The only thing I might reconsider is the cheese, as dairy is not very good for you in general, and you don't need the protein it has because of the burger and peanut butter. I would also use a whole grain bun.
You might want to check the brand of the veggie burger - most veggie burgers are incredibly healthy, especially considered they're processed food, but some are better than others.
Congratulations on your recovery, and good luck. c:
EDIT: Veggie burgers do have protein! They actually usually have MORE protein than their meat counterparts. Check your labels. c:

Its actually pretty healthy. The veggie burger is a lot of different vegetables and beans, which are high in Fiber and Vitamins. And the peanut better and apples are a good source of protein.
Good luck!

It is a great meal. Not fatty at all. Sounds like enough proteins and grains and the nutrition is great! Hope this helps(:
