Why doesn't the Bible have vampires in it?
It has unicorns, witches, dragons, zombies, angels, demons, cud-chewing rabbits, and sea serpents.
Why did it exclude vampires? (Not including references to any priests.)

Try the Book of Enoch. It doesn't call them that but you can see them described. They were a branch of the Nephilim which were descendents of human women and fallen angels.
