Mining and smithing..? Aw man, having trouble with thinking up five. I dare to say you've heard of "Minecraft," aye? Game has Mining in the title, and you can smelt the ores you find and craft or "Smith" yourself armour, weapons, tools and various other things. Tons of fun, and if I had a top 5 list, this would be at the top. The game by itself can become boring after a while, but when that happens, you can use Mods to add content - A fair few mods add more ores, things to craft, devices to use, there's a mod for almost anything in this game.
Going beyond that, I'm afraid I can't help you :-/

1 would most definitely be Minecraft. I mean, it's called MINECraft haha. Basically you collect (mine) resources and use them to craft them into all sorts of things... armor, weapons, furniture, doors, windows, etc. You can also fight monsters and level up and stuff. It's incredible and award winning for a reason! Look it up.
As far as my experience goes... Minecraft is the sort of game that, if you have the creativity, never gets tiring. You can never 'run out of things to do.' Want to build a log cabin? Want to build a fort? Want to build an entire kingdom? Make a huge Titanic-sized ship? Create a super high tower? You can do it all in Minecraft. There's so much to do... It's a sandbox, so you're free to do whatever you want in the huge maps.
#2 I'd suggest Skyrim. It's by Bethesda Softworks (also the makers of Fallout). It's a medieval themed game and in it you fight monsters and stuff. There are dungeons, magic, fantasy, etc. It's very cool. And as far as crafting goes, you can collect resources from all over the very expansive world. Resources can include furs from animals, their eyes, tusks, etc. You can also collect all sorts of plants and mine ores and smelt them into ingots. Using all of these things you can make weapons, armors, potions, and even enchant items. And depending on how much you enchant, brew, or smith, your level goes up. It's a very awesome game and this too is an award winner.
As far as my experience with this game, I love it. I've played the previous game in the series and loved that too, but in Skyrim the crafting/smithing is so much better. It's really an awesome game and there is SO much else you can do in it other than crafting and smithing. It's really the definition of a sandbox game, but still has quests and a main storyline that you can follow leisurely (or ignore entirely).

Minecraft: Complicated crafting system that might need a wiki if your imagination is horrible, mining system is interesting.
Terraria: Very similar to Minecraft but with easier 'smithing' and, later in the game, your pickaxes get replaced with drills!
TF2: Combining a bunch of materials gets you new weapons and, of course, hats. The closest this game gets to mining, however, is drilling in someone's head with a pickaxe.

Um the only games I've played like that are Skyrim, Minecraft, and Total Miner which I regret buying because it sucks balls
