Looking for tips/ideas on how to cook bison top sirloin?

    Bison/Buffalo meat, steaks and other cuts is very lean, not really much flavour, so do not over cook it, sear it in a pan and cook it n the oven or stove top, treat it like a regular beef steak of the same cut, medium or medium well is the furthest to go with it, you can slice it and make a stir fry or stroganoff, these are nice too.

    I think buffalo meat is extremely flavorful.

    Buffalo meat is great for Swiss steak. Just treat it like beef.

    You can roast a buffalo sirloin just like you roast beef. Set the oven for 300F instead of the usual 350, and baste it occasionally to keep it moist. Put a tent of foil over it between bastings.

    It makes the best pot roast I've ever eaten, especially when cooked in a slow cooker.
