whichs correctlysays that the Romans made a sort of marmalade out of quinces; and that orange marmalade was invented not by an Englishman, but by a Scotsman.

Modern Romans do, obviously - but Ancient Romans did not have oranges as they originate in China. Trees of the cultivated fruit used in marmalade don't appear in Italy until about 1500.

They also did not have pizzas or pasta or indeed tomatoes.

I don't think so, I've read that marmalade was invented by an English importer of oranges who hated the thought of the waste of orange peels. So he tried to find a way to make the peel palatable. Marmalade was his one success.
