'Quad' means 'four' but 'bike' is short for "bicycle' which means 'two wheeled cycle', 'Bi' meaning 'two'.
So how is a four wheeled ATV in any way representative of a bike?

For the same reason that a motorcycle is referred to as a 'bike', even if it has a sidecar attached.
People ride ON them, not IN them.
