If you don't get any good answers, consider sketching how you want your eggs. Draw a frying pan with a couple of eggs in it, then show them being flipped, then put on a plate and being cut with a fork so the yolk runs.
We got along okay in Finland and Japan with "dictionary, pictionary, and pantomime". It was fun.

I had never heard of EGGS OVER EASY but I saw the images on Google and for me they are what we call HUEVOS FRITOS.
VUELTA Y VUELTA is for a steak because it means that you turn it over. In this case the shape would disappear.
For me it's HUEVO FRITO CON LA YEMA JUGOSA
or
HUEVO FRITO CON LA YEMA POCO COCIDA
or something like that.
