My other HP 8600 Printer does not print the gray highlighted categories. How do I prevent the gray highlighting of the categories when downloading copies to my HP 8100?

Are you using the same application to open & print the document at both places? If not, then there may be differences in how it handles certain aspects of the document. If you're using the same application, there also may be certain options enabled on one & not the other.
The other possibility is that the 8600 may be stripping out certain commands from the document or it is simply not printing properly & you're not getting the highlighted areas printed like they should be (I've seen that on printers before).
