blue rare,rare, medium rare, medium, medium-welldone or welldone?

For larger cuts like a roast I like it medium rare-medium.For steaks I like it to be rare-medium rare.Every now and then I like a blue steak but only if it's done right and most restaurants won't/can't do it the right way.The meat needs to be almost room temperature(inside and out) before you cook it and restaurants aren't supposed to have room temperature meat hanging around.

I always ask for my steak Blue. Often the waiter doesn't know what this means, which I find annoying. I think with steak the aim is to keep it juicy, a dry steak is a waste. Cooking it blue ensures that it is juicy and tender. Also if you char the outside and leave the middle raw then you get the full spectrum of doneness from the outside to the middle ! Basically the rawer, the better the taste and texture. At home I cook a steak for 1min on each side.

I like medium-well.

Rare / Medium Rare made me sick growing up. I have a weak immune and my stomach is not the best. If I had my choice though, I would still pick Medium well because the concept of eating meat raw I don't personally find appetizing unless I was on the outback or a safari.

Anything more done than that and a good piece of beef has just been wasted.

well done because im not a barbarian. like im gonna eat raw food in 2012. the only reason people say they like rare is because they think " oh look, i like bloody bacteria infested raw steak because my sense of taste is so much better than yours that i'm willing to put all that aside for the sake of taste." no just STFU and go live in a cave
