How do I get slimes on Minecraft for Xbox 360?
I'm so irritated after all my effort I still haven't seen one slime! I dug down to just 1 above where you can see bedrock(y=5) and I've cleared out a 3 tall room that's 57x57. That's enough for potentially 16, 20, or 25 different chunks represented. Its also well lit to avoid other undesireables. Statistically even with only 1 in 10 chunks producing slimes, I should have found at least 1 or 2 by now! Am I doing it wrong? And I've heard they'll spawn on all difficulties but do they spawn more on the higher ones?

Slimes only spawn in certain locations on the map. This is determined by a pseudo-random algorithm according to the seed of the world. On any given map, only about 10% of it is capable of spawning a slime (a "slime zone"). Big slimes require a 3x3x3 open space to spawn, while small slimes require 3x3x2, and tiny slimes a 1x1x2. The frequency of each type of slime is equally likely.
There are handy "slime finding" tools that can help you identify a slime zone. You can find them here:

Because the slime zones are pseudo random, they may be located in "clumps" of zones, or even all next to each other. So, even if you cleared a 57x57x3 room, it's quite possible that there still isn't a slime zone within that area. If you're dead set on finding a slime, again I recommend a slime finding tool.
