Do u mean chips as in the English form ( chunky,chopped, fried potatoes) or in the US form (thin sliced fried potatoes, known in UK as crisps??)
Fave UK chips are homemade chunky oven chips roasted in olive oil, sea salt and ground black pepper...fave US chips are anything handcooked with lots of chilli, chipotle and pepper seasoning!

The fried ones in sunflower oil that you make yourself, you know where you peel the potato's and cut them into the slices yourself.

Big fat chip shop ones fried in dripping (higher temperature fat).
