1/4 sheet pans wont come clean?
i have 2 1/4 professional grade sheet pans that i've had for 13 years, i love them but they have a layer of burnt on stuff that no cleaner will touch, i have been using parchment paper to cook with on them but id like to see then silver again, any ideas

Try Easy-Off Oven Cleaner spray - it has worked for me. I spray it on, leave it for a while to let it work then wash with hot water and dish soap.

Wait for the next sunny day. Slide the pan inside a BLACK garbage can liner. Add 1 cup straight (undiluted) household ammonia and twist the bag shut.
Let it set in the sunshine for about 4 hours. The heat will make the ammonia react with the crud.
When you open the bag be very careful not to breathe in the fumes! You will still have to scrub the pan with hot soapy water and a brillo or SOS pad BUT the crud should come off much easier. If that doesn't work I don't think anything will.

SOS pads or steel wool will also work. Lots of scrubbing though. Wear gloves if using steel wool. Little slivers can break off and imbed in your fingers.
