Odd topic: Crayfish Farming?

My wife and I love Cajun food and are deeply involved in the cooking. Crayfish (crawdads or crawfish) are a staple in so much of this. We live in the Pacific Northwest where crawfish are 10 bucks a pound. I'm interested in a crawfish hatchery to grow and provide crawfish locally. I've tried groups like SCORE.ORG but its a really odd request and no one has any info. Tried Aquaculture, fisheries and even crawfish farming...no joy. Does anyone have a solid link to crawfish farming? I plan to get some property and start small. Thanks!

Update:

Growing them here is no big deal; they live in the local waters just fine and the average temps here are in the high 50s.

    I do not know how you are going to grow them.

    Don't they like warm weather?

    You would have to build a large building, with sun lamps and provide heat.

    Right?
