Who is this "fit athlete"??? Obviously, not that fit.
Anyway...
First, it's hard to say if you're meeting your needs without knowing your stats. What might be good for a small, young girl will probably not be for a big, bulky bodybuilder. So with that say, I will just assume you're normal weight and height.
Almost all your meals could use a source of fat and protein. Fat is essential for your body to use certain vitamins. You're consuming veggies, which is great, but you're also pretty much just consuming carbs. Carbs are great, but it's almost all you're consuming.
You need water. I'm assuming you're female now and say you need 8 cups per day.
You should look into consuming foods like soy, beans, fortified cereals, and maybe hummus. You're likely to be lacking in key nutrients. If this keeps up for a few months, you can develop many different health conditions. The most blatant one is some form of anemia.

You lack protein. You're getting, like, none. You need some beans for vegan protein
