I wanted to make an egg sandwich (no yoke, just the egg whites) but will the egg whites go off before lunch without a fridge?

It is possible that the bread will go mouldy before the egg is unfit to eat. I have kept hard boiled eggs for over three days with no problems. Stop being so fussy any bacteria that develop will be so few that your body is well capable of dealing, in fact, it will improve your bodies response to nasties.

Don't risk it. Bacteria starts to grow in food between 40-140 F. Keep your food above or below that temp range.
