Unsure of marinating in just acidic ingredients.?
I made a marinade with olive oil, crushed garlic, fresh lemon juice, balsamic vinegar and wine for a butterflied leg of lamb to BBQ.
1. Is this too acidic for a marinade or should I add something else?
2. I know acidic marinades tenderise but can get bitter if too long, so do I put in the fridge for a few hours or do I just rest it in the meat for 30 mins or so at room temp before putting on the bbq?
Many thanks

A whole leg of lamb is fine to marinate either overnight, or at least a few hours. It should definitely sit at room temp at least one hour before putting on the grill
Those ingredients are classic for lamb - taste the marinade - if you feel it's too tart, add more oil - marinade will not make anything get bitter.
By the way, a little oregano for a full-on Greek lamb would be a good addition here.

They dont get bitter they start to cok the meat and can even over tenderize it and you end up with mushy mealy meat. 2-3 hours is probably fine but don't go more than that.
