I want to cook the mince now with onion and grated carrot and then put it in the fridge to cool for about 2-3 hours, then cook it in a lasagne- is this okay?!

Yes But, when you make the dish, you need to heat the mince, and layer it with the Lasagna, then cheese sauce then lasagna, then mince, and so on, if you do not heat it you will use a lot more energy to reheat and then cook the pasta, also the mince needs To be in a sauce.

Sure shouldn't be any problem. Actually easier to layer the cool mince than the hot.

As long as you cool it quickly it will be ok.
I suggest standing the pan in cold water to assist cooling. Much faster than the fridge and means your fridge stays at the correct temp too.
