Easy chicken dinners?

I have a package of skinless, boneless chicken and I have a dinner idea but I'm not sure if it would turn out well. I need some opinions please! And any other meals I could make would be helpful as well. Please and thank you!

Baked chicken (seasoned with Italian dressing)

Mashed potatoes with chicken gravy

Some sort of vegetable.

    its a simple recipe in which chicken is roasted with Italian herbs and seasoning and its cooked with juices and chicken, onions and pepper.

    You can easily served it with mashed potatoes and brown gravy with some buttered peas or baked beans and carrots.

    Sounds O.K. to me, especially if the veggie is roasted asparagus or okra and tomatoes. The rub is the chicken gravy. You need to capture the yummy bits of baked-on stuff, along with the juice and fat from the baking pan. Once you do, you can use these juices to make a roux with flour, toast it a moment in a skillet, then dilute with milk and season for the chicken gravy. Please don't buy a jar or packet of that awful gravy mix from the supermarket.

    The mashed potatoes with chicken gravy sound great...and for a vegetable, how about either lemon-garlic asparagus or broccoli with melted cheese? :)

    Chicken Gremolata

    Remove skin, dip in prepared mustard then in dried parsley. Put 2 Tablespoon oil in fry pan. Fry, covered with undersized lid, 15 minutes on each side over medium-low heat. Before eating reheat in microwave; 2 minutes.

    Sounds great! Try marinating your chicken in Italian dressing for several hours before baking it to produce a juicy, flavorful chicken. For veges, you might consider fresh green beans or asparagus. Or you might even consider corn, such as roasted corn on the cob, or creamed corn, or even a corn spoonbread with salsa.

    Chicken salad sandwiches..

    Cut the boneless chicken and make Nuggets/breaded/

    Shish-ka-bob chicken and stuff/
