Why does the nutritional info (protein content) on skimmed milk sometimes differ by brand?
I am not asking why whole milk has a different protein content to skimmed milk, I know the reason for that. What I am asking is why do some cartons or bottles of skimmed milk say something like 36g of protein per litre and others say only 31g of protein per litre. Are they just using different estimates or is there a very different skimming process going on which results in a lower level of protein in certain brands and higher in others.

actually the COW can vary the protein herself and I suspect the different companies use different values in the "normal" range to figure their label.
the other option is that some companies add non fat powdered milk to the skim to keep it from being watery tasting and that would boost protein. (we make both and lable them differently)
