I like to experiment with different combinations of cheeses...and sometimes like to throw in a little bit of prosciutto. However, there are some meats I enjoyed while dining in Italy several years ago, that have not been allowed for import to the United States.
When the ban is soon lifted, you can bet I will be whipping up some mac & cheese--as well as other dishes--that includes these newly available treats!
For a list of the Italian meats that we can soon enjoy, see this article: http://www.npr.org/search/index.php?searchinput=it...

Almost every time I cook macaroni & cheese I add something to it. While the macaroni is straining, I melt butter in the bottom of the pan and fry either chicken or tuna. Sometimes I add cottage cheese, garlic, or babies. Some people us tomato soup instead of milk and call it "red mac & cheese," but my grandparents have some sort of red phobia, so I don't make that. I also might add more cheese and bake a casserole in the oven.
It just depends on how I'm feeling.

Always. Either onion powder, parmesean cheese or hot sauce. Or ALL of it. Haven't done bacon yet, but I should.

Sometimes. I recently had some with artichokes in it. It was delicious, so I got the recipe, and I look forward to making it myself.

Smoked paprika, usually. It gives it a nice smokey cheddar flavor, which my family loves.
