What is a good choice for a good handling Cafe Racer motorcycle?

I am looking to build a Cafe Racer motorcycle with good handling characteristics, hopefully something in the 80-100 hp I am hoping to mount modern super sport suspension, brakes and alloy wheels... The idea is an old school look with modern technology components. A bike I can have fun and drag knee, but that won't easily wheelie.

Update:

Since this is Motorcycle Racing Section, I would have expect some one with Vintage Motorcycle Racing experience to have inside knowledge of a good base motorcycle to build a high performance custom bike.

I was thinking maybe a Suzuki GS1000 with a late model GSXR1000 front end, Brembo brakes, Machesini forged set of wheels, with Pirelli Supercorsa SC2 race tires, and a Penske Shock on the rear end... I am not knowledgeable enough on vintage bikes. I was considering a Kawasaki KZ1000, but I heard the handling of that bike is some what sketchy. These two are big heavy bikes.

Keep on mind I will be doing regular track days, and handling is very important to me, more important than raw power...

I meant I would remove the old components, and replace them with a late model GSXR1000 front end, Brembo brakes, Machesini forged set of wheels, with new Pirelli Supercorsa SC2 race tires, and a Penske Shock on the rear end...

To make a Vintage look bike, with modern technology in suspension components, geometry settings, brakes, light wheels and sticky tires.

    A 100 hp light weight bike that won't wheelie, it doesn't exist sorry to say. Maybe I'm too vintage when you suggest a GSXR as vintage.

    I would have a look at a British site called "kneeslider.com" and there is a few guys there making Cafe Racers and you might find someone there with good ideas about what to look for and how to go about it. For me I found a "my dream Cafe Racer" there. The big issue is to get a frame with great handling and brakes, if you have that then the engine choice is a minor concern. What you need is a low CofG and light overall weight.

    TO CORRECT YOUR ANSWER ABOUT MY SNAKE: I am not "antagonizing" her. Im not doing anything wrong. I never even used the word "pissing off" or "pissed off" You give false advice and you obviouisly dont know what your talking about since all your stuff is about motorcycles.
