Possibly he even feels degraded. Like, someone that loved "the great Stefano DiMera" had sex with the likes of Raphael Hernandez (I love Rafe, but let's face it. Stefano has gone to pretty extreme measures to express his hate for him). It also may have to do with the fact that Stefano has not "moved on". I think if he were happily remarried he probably wouldn't be so mad. Another possibility is that he just plain wants to ruin her life after the dissolution of their marriage and the whole Ian McAllistair thing... Im sure his motives will become a bit more clear in the future.

Stefano was betrayed by Kate, but still cares for her. I don't think he truly loves anyone. He thinks of his family, which at one time included Kate, as possessions.
