Why do people do this?

This happens in real life, and on TV..

When people eat something they've never tried before, when they're chewing it, they rub their fingers together. Like the pointing finger and the thumb.

Why?

    probably to release nervous energy.

    I think you are referring to the "OK" gesture, so it's a way to show approval without having to talk.
