What exactly is cabeza made of in Mexican cuisine?

I just tried a cabeza burrito from a taco truck. It wasn't bad. I know cabeza means head in spanish and I know they roast the whole head of an animal (probably a cow or pig) but what I want to know is if they like take the top of the head or something and put it in the food or is it the brain that they serve?

Also, it was a little crunchy in places. Maybe they just didn't cook the rice all the way or did I get some of the skull too?? Lol idk it's probably a stupid question but that's why I'm asking. I'm just curious about what I ate.

    Cabeza usually points to beef unless otherwise specified. It will include all edible flesh found on a cow's head which also include lips and eyeballs. There's no need to freak out on the eyeball part because it won't taste offensive unless you let it bother you psychologicaly. Unlike other animals eyeballs which got an obvious eyeball taste and texture, a cow's eye will taste like very tender beef or fatty beef instead. Brain (seso), and tongue (lengua) were usually sold separately. The crunchy little pieces you mentioned should be cartilage found in ears. LOL

    Added: Okay, it's sesoS instead of seso.

    Barbara & James W provided good answers. FYI...in Spanish, brains are called "cesos" (sp?) pronounced: Sey-sos. They are usually served separately as a menu item at the taco stands where I've eaten. I'm a good eater and yet I'm not so brave enough to try them. Funny, it's all psychology I guess.

    Just the meat from the jowls and snout. Brains are really soft and they don't look like flesh. And I don't think you'd be able to chew bone.
