What variety of shallots is least likely to bolt?
Last fall I planted Sante shallots. They came up like they were supposed to this spring and each one made 4-5 nice big bulbs but every one bolted in June. Is there a different variety that is bolt resistant?

Eschalion Zebrune, Prisma F1, Camelot, and Ambition should all mature later than Santes.
