A vegetarian that needs to change her diet?

Hey guys,

I will have been a vegetarian for two years as of October. At first, I did really well with healthy eating and a balanced diet, but I've started getting worse and worse about that. I'm a college student [read: poor and short on time] and I generally hate coming home after a long day and cooking. Being committed to vegetarianism isn't the difficult part, but I end up eating a lot of junk food and have started gaining weight as a result (whereas the first 6 months or so, I lost 20 lbs; I probably gained it all back). What is the best way to go on a diet, get the iron intake I need, and eat healthfully without spending hours in the kitchen each night? Thanks! :)

    Have you tried veggie burgers? They have frozen ones you can heat up in the microwave that I think are delicious. I eat spinach on mine.

    Geez, don't listen to those ppl about turning diet to meat eating!

    I suggest cooking in bulk! Seriously, this works. At the beginning of each week, you could make a big pot of soup that'll last through out the week. You could even freeze a portion and save it for the next week after that. Invest in some stag storage containers and don't over calculate the amount of food you need and end up letting done expire. Don't get discouraged, it takes just about the same amount of time to cook meat or something.

    Cook a pot of whole grain quinoa with turmeric, very small amt of salt, black pepper and bay leaf. Freeze two cups per small freezer bag, making a lot of them. Do a quick vegetable saute, using different vegetables every night. Having warmed up one bag's worth, either mix it in or have it on the side. Eat it with cherry tomatoes and sliced avocado, and maybe some cheese and/or beans you enjoy. Also, take a bag of quinoa with some cherry tomatoes and cheese in your purse, so when at school you can munch without gaining weight. Fresh coconut meat slices are, also, good to freeze. They are soft when defrosted, are healthy, and leave a full tummy feeling. One thing about turmeric: it is healthy, but it can leave a yellow stain if it falls on your clothes. Think mustard. It takes a little work to get out. You can make some quinoa without turmeric for eating on the run, if you run into such hassles.

    The soup suggestion, above, is a good one, but remember fresh food is best. That is why I freeze, as a compromise. However, legume soups do improve in taste, the longer they sit in a cold refrigerator, days at a time, even. You could trade off perfect healthy food for perfect tasting food that is kind of healthy, warming up days old bean soups. My husband is in ecstasy, digging into the fridge's bean soup pot, through the week. I split it up, the pot for him and bags of frozen soups for me.

    You can take iron supplements. They usually aren't very expensive. When I went to college I had a very hard time sticking to my diet because going and getting fast food was so much easier and and quicker and ideal for me. The thing that I did which helped me a lot was I would go online and look up vegetarian recipes for college students. You would be surprised at how many things you can find which are so quick and easy to make ^_^. I usually enjoy browsing through this site http://studentrecipes.com/recipes/vegetarian/
